Possessing a sophisticated ferment facility and staffing, each cocoa bean is expertly brought to out of harvest and fermented to its best potential in the Oahu climate.
These beans are then aged for a year before they hit the market, unlike our Big Island beans which are "young" and non-aged. A great way to compare islands and processing!
